The primary objective is to understand the effect of solid particles on emulsion stability. Emulsion stability will be determined by coalescence/aggregation rate of droplets and rupture pressures of thin films as well as by standard techniques of freeze/thaw stability etc. The specific affect of solid particles on the equilibrium and dynamic properties of emulsions, including equilibrium measurements of film thickness, rupture pressure and surface dynamic properties of elasticity and viscosity, will be studied.
