Summary for research to be carried out at Reading is given below.The project will consist of two distinct interdependent parts: A: Improved design and operation of the fermentation process and B: Improved monitoring and control. A: Current fermentation processes will be monitored to identify any potentially adverse spatial and temporal changes in key physical/chemical parameters. Flow patterns and gas liquid dispersion characteristics will be measured as a function of time and position; flavour development will be monitored simultaneously (this being the ultimate determinant of product quality). Scaled down processes (10-50 L) will be developed. A range of options to improve efficiency of mixing and mass transfer will be considered on the small scale system. Once the optimal design and process conditions have been identified the process will be scaled up and tested. Designs will be judged successful if throughput is increased significantly, while maintaining product quality.B: Appropriate control strategies will be developed eg adaptive learning control strategies, including run-run strategies, which continually update statistical/empirical models of the process, to refine and improve process control. Where possible models will be based on an understanding of physical mechanisms underlying relevant processes.
