Strain rates of the order of 10-1000 s-1 occur widely in jets and sprays, coating equipment, foams and bubbly dispersions. The transfer of species between the bulk solution and the gas/liquid interface is an important characteristic affecting coalescence and break-up, coating uniformity and foam stability. The aim of this proposal is study the behaviour of surfactants at newly created liquid surfaces on the timescale of 1-100 milliseconds. Ellipsometry will be used to measure the surface excess of surfactants in a liquid jet as it emerges from an orifice. The flow profile in the jet will be measured by laser Doppler velocimetry. Mathematical models will be developed to explain the observed adsorption kinetics of the surfactant at the air-water interface and the Marangoni effects caused by the large surface tension gradients near the orifice. These validated models will then be used to explore the effects of surfactant-generated Marangoni flows in coating flows, on bubble coalescence and on mass transfer rates in turbulent dispersions.
