Many different biomacromolecules from liquid crystalline dispersions. This proposal will study the biphasic (aniostropic = isotropic) region of two systems: chitin and insulin-based amyloids. Spherulites are knowm sometimes to form in such systems, and the aim will be to determine the factors which determine whether or not spherulites form, including the mechanism by which phase seperation into this particular form of biophasic behaviour occurs. In addition, the reason why spherulites can be stable against coalescence will be explored.
