Summary for research to be carried out at Birmingham is given below (summary for overall project is given in the Case for Support):The project will consist of two independent but linked parts to study mixing and heat transfer processes within three parts of the overall brewing process.i. The mashing process will be studied to examine the factors which control the interaction between particles and the fluid. The ways in which the particles in the mash and breakup within the liquid will be studied as a function of fluid conditions. The mechanical strength of the particles will be characterised on a micron scale and related to the behaviour within the bulk system. Diffusion and reaction within the mash particles will be quantified.ii. Mixing and heat transfer processes within wort boiling will be studied via examining the flow patterns and fouling behaviour of boilers. The interaction between flow and fouling will be studied to identify ways of enhancing mixing efficiency and reducing fouling.iii. Within the fermenter, work will study flow patterns and the formation of fouling using both experimental techniques such as LDA and computational predictions.
